Za’atar Roast Chicken with Yogurt Sauce

Say hello to za’atar, my new favorite word and herb blend. I wish I can just go around saying za’atar all the time; za’atar, za’atar, za’atar. If I were a warrior in a fantasy novel, that could be my name. Okay, nevermind. Let’s move onto the recipe. Za’atar is a middle eastern herb and seed blend with thyme, oregano, sesame seeds, salt, and sometimes other herbs from similar families. Here is a variation of za’atar that you can make and store for future use.

This incredibly easy recipe serves a za’atar flavored yogurt sauce to go with the tender za’atar seasoned roast chicken. The chicken is served with a simple garlic pasta.

Za’atar Roast Chicken with Yogurt Sauce

Ingredients

  • 2 tablespoons roasted black sesame seeds
  • 2 tablespoons dried oregano
  • 1 tablespoon chopped thyme leaves
  • 1/2 cup fat-free plain Greek yogurt
  • Salt and pepper
  • 2-4 skin-on boneless chicken breast pieces (depends on the number of servings you want. seasoning and yogurt is enough for 4 pieces).
  • 1/4 cup extra-virgin olive oil
  • 6oz thin spaghetti or angel hair
  • 3 garlic cloves, chopped
  • 1 tsp red pepper flakes
  • 1 tbsp kosher salt

Recipe

  1. Preheat the oven to 425°.
  2. Heat a pot of water over high heat until boiling. Add 1 tbsp of kosher salt to boiling water. Cook pasta according to package instructions and drain pasta. Set aside.
  3. Line a baking sheet with parchment paper and place chicken pieces (skin-side up) on parchment paper. Brush chicken pieces with 2 tbsp of olive oil and sprinkle chicken with salt and pepper. Bake chicken for 20 minutes.
  4. Combine sesame seeds, oregano and thyme in a bowl.
  5. Add yogurt in a separate bowl. Add 1 tbsp of the herb mix to the yogurt bowl. Season with salt and pepper and mix well.
  6. Sprinkle remaining herb mix on chicken pieces and roast for another 5 minutes until chicken is cooked through.
  7. Heat 2 tbsp of olive oil over medium heat in a large frying pan. When oil is almost smoking, add garlic and fry for 1 minute until garlic is browned.
  8. Make sure pasta is drained and dry, then add to the frying pan. Sprinkle salt and pepper generously and add red pepper flakes. Fry pasta for 1 minute then remove from heat.
  9. Serve roast chicken with yogurt sauce with garlic pasta on the side.
