No Bake: Date and Honey Granola Bars

Most of us would agree that it is probably not a good idea to venture into Costco on a Sunday afternoon, and yet, I always find myself there somehow. The sea of people crowding around free samples never ceases to amaze me. What I do like about Costco is the surprising seasonal ingredients that show up Рlike the huge boxes of Medjool Dates I spotted next to the bananas. Medjool is the king of dates. They are sweet, large, and juicy even when they are dried. I decided to make these easy no-bake chewy granola bars with the box of dates I brought home, and they turned out delicious!

No Bake: Date and Honey Granola Bars


  • 1 cup packed medjool dates, pitted
  • 1/4 cup plus 1 tbsp of honey (or sub maple syrup or agave for vegan option)
  • 1/4 cup creamy natural almond butter
  • 1 cup roasted unsalted almonds, coarsely chopped
  • 1 tsp of vanilla extract
  • 1 1/2 cups rolled oats


  1. In a food processor, chop dates until small bits remain (about 1 minute). It should form a sticky dough-like consistency.
  2. Preheat oven to 350F. Toast oats in the oven for 10 minutes until slightly golden brown.
  3. Add oats, almonds and dates in a bowl.
  4. Heat honey, vanilla extract and almond butter in a small saucepan over low heat for a 2 minutes until softened and incorporated. Pour the honey almond butter mixture over the bowl of oats. Mix with a spatula until well incorporated (it will be very sticky).
  5. Line a shallow 8x8 type baking dish with large parchment paper (enough to fold over and cover the top later). Add mixture to lined baking dish. Press down hard until the mixture is flattened throughout the dish. Fold the parchment paper over the top and let the granola set in freezer for 25-30 minutes.
  6. When set, lift parchment paper and granola onto a cutting board. Cut into bars. Store in airtight container for up to a week.
