Clean Eating: Cafe Gratitude/Overnight Oatmeal


Summertime is for new clean eating ideas. My yoga friend has been telling me to try Cafe Gratitude for months now, and I finally decided to have dinner there Friday night.

It’s a slow moving place, with long wait time (always make reservation) and long serving time, but it’s one of those places where I don’t really mind the wait. The whole place makes me feel like I’m at a spa, and when I’m at a spa, I don’t rush.

The food here is vegan, organic, mostly raw, creative, playful, nutritious and delicious.

The food here makes me feel good and healthy. There is a cold overnight oatmeal I make that makes me feel the same way. At least once a week I wake up early and go on a 5-mile walk/hike with my hubby. In those mornings, I grab the jar of overnight oatmeal I quickly put together the night before and make that the breakfast. It’s cold, filling, healthy, and so refreshing. It is unbelievably quick: 1) pour oats, almond milk, chia seeds, honey and vanilla extract in a mason jar 2) close jar, shake it around like a cocktail, and put in refrigerator. All that’s left is add granola and fruits when served.

Easy Overnight Oatmeal


  • 1 cup of rolled oats
  • 1 1/2 cup of unsweetened almond milk
  • 1 tbsp of chia seeds
  • 2 tsp of honey
  • 1/2 tsp of vanilla extract
  • 1/4 cup granola
  • 1/4 cup blueberries or other fruit
  • Honey, for serving (optional)


  1. In a medium-sized mason jar, combine oats, almond milk, chia seeds, honey, and vanilla extract.
  2. Close jar tightly with cap and shake it around until well mixed. Place in fridge overnight. Keeps up to 4 days.
  3. When ready to serve, pour oatmeal into 2 cups. Add a little more honey and top cups with granola and fresh fruit.
