Korean BBQ restaurants are always so much fun. The selection of meats to grill based on cut and flavor is endless; short ribs, marinated pork, shredded beef, and so many others. This recipe is of one of my favorites, the Gochujang marinated pork. The marinade is a mixture of Gochujang (Korean spicy paste), mirin, sake, vegetable oil, ginger, and garlic. Marinate the pork the night before and throw it on the grill the day of for a quick and delicious meal.

Korean BBQ: Marinated Grilled Pork


  • 8 garlic cloves, peeled, crushed
  • 1 2" piece ginger, peeled, sliced
  • 1/2 cup dry sake
  • 1/2 cup gochujang (Korean spicy paste)
  • 1/2 cup mirin (sweet Japanese rice wine)
  • 1/4 cup vegetable oil, plus more for grilling
  • 1 1/2 pounds skinless, boneless pork shoulder, sliced 1/2" thick, against the grain


  1. On the day before, purée garlic, ginger, sake, Gochujang, mirin, and 1/4 cup oil in a food processor. Set 1/4 cup marinade aside, cover and refrigerate. Transfer remaining marinade to a large shallow baking dish. Add pork pieces, turn to coat pork in marinade, cover, and leave in fridge until the next day.
  2. Prepare grill for medium-high heat. Oil grate. Remove pork from marinade and grill, basting with reserved marinade, turning occasionally, and grill for 10 minutes.
  3. Serve pork with rice.
