Is it really July already? Where has time gone? The Fourth is coming up and everyone needs a little red, white and blue this weekend. You know there’s going to be trifles, cupcakes, BBQ and drinks, so it might be a good idea to serve up a healthy and refreshingly cool dessert. What’s even better is that this dessert requires only five ingredients and takes five minutes to make (three minutes if you’re really really fast).
This is a recipe for a frozen Greek yogurt and white chocolate bark with berries, almonds, and honey. Chocolate bark is a popular holiday dessert because it resembles, well, bark, and it is pretty. Nothing wrong with bark in the summertime if it is 1) frozen 2) healthy and 3) patriotic. So here it is!
Ingredients
- 2 cups of plain Greek yogurt (I used Fage 2% plain)
- 1/4 cup honey
- 1 cup white chocolate chips
- 10 almonds, roughly chopped
- 1 cup of berries (raspberries and blueberries)
- 7" x 11" (or slightly larger if you want the bark a little thinner) shallow baking dish
Recipe
- In a bowl, combine Greek yogurt with honey. Stir well. Add chocolate chips. Using a spatula, gently fold the chocolate chips into the mixture.
- Line the baking dish with parchment paper. Pour the yogurt mixture onto the parchment paper and smoothing the mixture out with a spatula.
- Gently add almonds and berries onto the top of the mixture. Press each berry or nut down a little bit so that at least 1/3 of the berry or nut is in the yogurt mixture.
- Cover dish and put it into the freezer for at least 2 hours. When hardened, use a sharp knife to cut into large rectangles. Note: It's very cold right out of the freezer! You might want to leave it out just a little bit.
